150g butter at room temperature
2/3 cup sugar
3/4 cup self raising flour
3 beaten eggs
vanilla essence to taste (about 1/2 – 1 tsp)
Makes 12 cupcakes or 30 mini cupcakes.
Place all ingredients into a bowl and mix until a smooth consistency.
Spoon mixture evenly into muffin tray lined with patty pans.
Bake at 180 degrees (160 degrees fan forced) for 18-20 minutes or until light, golden brown.
Place on cooling rack to cool before decorating.
